Strawberry Rhubarb Crisp

Cooking Time

1/2 to one hour - until the fruit is cooked and the top slightly browned

Ingredients

Fresh Strawberries - Enough to fill an 8x11 baking dish

Fresh Rhubarb slices - 2 stalks

Instant Tapioca - 4 Tbsp

Stevia - 1/2 cup to 1 cup  depending on taste

Mixed oats, raisins, nuts, and chia seeds  or use granola type cereal - enough to coat the top


Directions

Fill an 8x11 baking dish with halved fresh strawberries and 2 stalks of fresh rhubarb slices.

Add  instant tapioca and 1/2 to one cup of stevia.  Mix up and sprinkle the top with oat mixture or  granola type cereal

Bake in a 350 deg. Oven for 1/2 to one hour - until the fruit is cooked and the top slightly browned.
