2 steamed sweet potatoes
4 cups mixed greens
1 carrot, peeled (shavethe entire carrot using a vegetable peeler)
½ cup sunflower seeds
1 large cucumber, peeled and chopped
Place a large pot with an inch of water on the stove over high heat. Place a metal steam basket inside. Chop the sweet potatoes into quarters and place in the steam basket. Cover and steam the sweet potatoes for about 10 minutes until soft in the middle. Remove from heat and serve on top of the salad.
Add the remaining ingredients to a large salad bowl and serve with the sweet potatoes. Top with your favorite dressing.
